The village of Chitry-le-Fort lies just outside the famous wine region of Chablis. Like Chablis, the cool northerly climate and Kimmeridgian chalk soils combine to create one of the finest expressions of Chardonnay in Burgundy. The Colbois family has farmed here since the early 20th century — Michel and his son Benjamin now work the vines and soils manually, roots plunging deep into the chalk for a true expression of terroir. No chemicals, hand-harvested, aged on lees, bottled with little or no filtration. The domaine has received numerous citations in the French and international press. About This Wine Made from Chardonnay grown on the same Kimmeridgian chalk soils as Chablis, farmed to HVE certified standards. This is a wine of remarkable purity and freshness — the mineral character of the chalk soils shines through in every glass. A perfect partner for fine fish, shellfish, and light chicken dishes, and exceptional value for the quality on offer. Tasting Notes Colour: Pale gold with a fresh, bright appearance. Nose: Pure and mineral — green apple, citrus, and a distinctive chalky freshness. Palate: Clean and precise with excellent acidity, mineral depth, and a refreshing, food-friendly texture. Finish: Long and mineral with a clean, elegant close. Food Pairing A perfect partner for fine fish, shellfish, and light chicken dishes. The mineral precision also makes it excellent with oysters and seafood platters. Details Grape: Chardonnay Region: Chitry, Burgundy, France Farming: HVE Certified Style: Medium Rounded White Serving Temperature: 10–12°C Alcohol: 12.5% Bottle: 75cl Drink: In the next two years
